Detailed Explanation of Jujube Powder
Jujube powder is a powdery product made from fresh or dried red dates (Chinese jujubes) through processes such as cleaning, pitting, drying (e.g., hot air drying, freeze-drying), and grinding. It concentrates the nutrients and sweet flavor of red dates and is widely used in food processing, healthy diets, and other fields. 
Production Process
Raw Material Selection: Choose plump, mature red dates (common varieties include Golden Silk Jujube, Gray Jujube, Winter Jujube, etc.), and remove worm-eaten, moldy, or shrunken fruits.
Pretreatment:
Cleaning: Remove dust and impurities from the surface of red dates; if necessary, soak them in warm water and rinse.
Pitting: Remove the jujube pits manually or mechanically, retaining the flesh (some processes retain a small amount of jujube skin to increase dietary fiber).
Drying Process:
Hot Air Drying: Cut the jujube flesh into small pieces and dry them in a hot air environment at 60-70°C until the moisture content is below 10%.
Freeze-Drying: Freeze the jujube flesh first, then sublimate the moisture in a vacuum environment, which better retains nutrients and natural color.
Grinding and Sieving: The dried jujube flesh is crushed by a grinder and sieved through an 80-120 mesh sieve to obtain fine jujube powder. Some products adjust the fineness according to needs.

Carbohydrates: About 70-80 grams, most of which are natural fructose and glucose, with a sweet taste, capable of quickly supplementing energy.
