Manufacturing process
Raw material processing: Select fully ripe bananas and peel off the skins. Ripe bananas are delicious in color, aroma and taste, and the degree of Browning is reduced.
Color protection treatment: Cut the bananas into thin slices or soak them as a whole in a bleaching solution containing antioxidants and 0.2% sodium bisulfite for 10 to 15 minutes. Alternatively, sulfur fumigation treatment can be used. Burn 10 to 15 grams of pure sulfur in one cubic meter of volume for 15 minutes to reduce the sulfur dioxide concentration to 1%, thereby achieving the purpose of color protection.
Drying: Ordinary drying can be carried out at 60℃, but at this temperature, the drying time is long and the loss of aromatic substances is large. Factories with the necessary conditions use low-temperature vacuum freeze-drying equipment. Banana slices are placed on shallow trays and frozen at -28 ℃ for 1 hour. Then, they are dried at 10-40℃ under a vacuum degree of 5-0.1mm mercury column, causing the moisture in the bananas to sublimate. The drying purpose is achieved in a short time, and the moisture content of the product can be controlled below 3%.
Crushing: Grind it into powder in an environment equipped with a dehumidification device, then sieve and finely grind it to obtain the finished product of purple or light yellow banana powder. Packaging: Due to the low water content and hygroscopicity of banana powder, it needs to be vacuumed or nitrogen-filled and sealed in packaging, and stored or circulated under low-temperature and low-humidity conditions.
